Everyone's favorite Potato Salad

Since it is the start of the summer season, Julianne and I thought it would be fun to post some recipes that are great to take to all of our fun summer outings. The first one is Everyone's Favorite Potato Salad. This is my Mother's recipe. She made it quite often when I was growing up. She took it to family reunions, barbecues, birthday parties etc. Since I got married, I have also taken it to many parties etc. It is always a crowd pleaser! It is rare to have leftovers! This is truly the best potato salad I have ever eaten!

Everyone's Favorite Potato Salad

Ingredients:
4 quart sauce pan of boiled potatoes (12-18 small potatoes)
14 boiled eggs (peeled)(set 3 aside for decoration on top)
2 tsp. prepared mustard
1/2 tsp. salt
1 tsp. onion powder
3/4 tsp. season salt
1 1/2 Tbsp. apple cider vinegar
1 C. milk
A few shakes of Paprika

Directions:

1.Cut potatoes and eggs into small cubes. Put in large bowl. Cover and set in refrigerator while you prepare dressing. (set aside 2 or 3 eggs to decorate the top of the salad with)

2.In medium sized bowl, whisk together all other ingredients except for the paprika.

3.Remove potato, egg mixture from refrigerator. Pour dressing mix into the potatoes and eggs. Stir thoroughly. Add a little milk if it isn't moist enough.

4. Slice the eggs that you set aside and place neatly on top of the salad.

5.Sprinkle paprika on top of salad.

*Note: It is very important to keep potato salad cold! Here are two ideas that are helpful in keeping it at a cool temperature:
1. Set your bowl of salad in a bowl of ice.

2.If you are taking a large bowl to a party, Put the salad in the refrigerator, taking out small amounts as needed. This will ensure that it doesn't warm up enough to get bacteria in it.

Rodeo Woes

Want a rodeo but your horses are indisposed? In Utah, lack of horses for a rodeo are just a small little bump; any problem can be solved. So what's the answer? Hobby horses!

When a herpes outbreak required that the horses for a few of Utah's rodeo shows be quarantined, rather than cancel the shows (which would have made a whole lot of sense) Utah decided that the show must go on! They required their rodeo queens to prance around the arena using stick hobby horses. Oh my! Poor girls. Though they were the victims of somebody else's bad joke (or stupidity, you decide), they handled it well. Instead of forfeiting or throwing a fit, which I probably would have done, they cowgirled up, performing their routines without their noble steeds.
No one can ever say that Utah doesn't get things done!

Ready! Set! Go!

Hello Everyone,

We, at Boospire, started this blog with the intention of creating a place where our readers ccould go to brighten their day, boost their spirits, and be inspired. Unfortunately, we had a few circumstances in our lives that required us to set it aside for a short time. We are excited to announce that we are ready to get started again!

Making a positive impact in the lives of our readers is very important to us! With that in mind, we decided it was necessary for us to narrow our focus down to serving the needs of women. We adore all of you men out there, but feel that our blog would benefit more people if we focused on one gender at a time. We are considering starting a blog for men in the near future.

To all of you amazing women out there, We believe that every one of you has enormous value and that your lives are very worthwhile!
